Having a meal menu was always a nice concept, but I could never manage it for more than a couple weeks.
So now, with my son home (and needing softer foods - although the doctor cleared him for a bit more this past week because he's doing so AMAZING :) - and me back to work full force, a bit more running around to do with follow up doctor appointments and outpatient rehab - and, with it being the end of the school year (as a teacher, I have a lot on my mind that I want and need to do) - its great to have foods in the fridge to just heat up. And it gives me that sense of "ahhhh......" haha
I have wonderful friends. Two, who are also gluten free (who I can completely trust their kitchens and their cooking) brought fabulous casseroles for the family! NICE! (Tator tot casserole, shepherd's pie, ground turkey and noodle casserole, bread sticks, corn bread, banana bread).... all very yummy. How nice it was (and is) to have something to heat and eat! - that I can trust and enjoy! It inspired me!! Casseroles! A great way to have something ready to reheat. - My husband and I love leftovers so we don't always feel like we have to cook.
So, today, I made a list on the fridge of the foods we have - and am now currently adding to that list so we're set for the week. Ahhhhh... lunch is ready to put in a dish to take to work. Dinner is a buffet of sorts. So for this week we have:
Leftover turkey/noodle casserole
Leftover fried fish and coleslaw
Leftover potato casserole
Brocolli cheese soup
Chicken and dumplings
and brownies (a bit healthier version - which I'll share on Adam's Facebook page after they cool and we try them. Shhhhh.... don't tell my family. If I tell them what's in them, they might not try them, haha - but my Michael needs more protein and we all need healthy food - but we all need a treat, sooooo..... we shall see how they turn out. :)
Ahhhh.... variety and NO COOKING! all week long! I LOVE it!
Next week - I'll go through my freezer to list what's there and make a menu idea planner from what I have available in the freezer and pantry.
Now - On to finish my chicken salad and chicken and dumpling casserole and brocolli cheese soup so I can enjoy this beautiful day :)
