While there are no grain flours included in this recipe, please check the source of your baking powder and xanthan gum if you need to avoid anything besides gluten.
(I am not an "official" baker or recipe site. I do like to eat, however, and like to share recipes I find or come up with that are keepers.)
Every now and then I experiment with a baked product using other flours, flours that are higher in fiber and protein. This one is a keeper! I'm SO impressed. These biscuits don't have a taste that needs to be acquired. They're GOOD!
I even froze the first batch to see how they'd do. Once thawed they tasted just as great!
Gluten Free Drop Biscuits
1/2 cup SunFlour (sunflowerseed flour)
1/2 cup almond flour
1/2 cup tapioca starch
1/2 cup arrowroot starch or potato starch (I made it both ways and couldn't tell the difference)
1 Tablespoon baking powder
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon xanthan gum
1/2 stick butter
1/2 cup (plus 1 Tablespoon if needed) almond milk (I'm sure any kind of milk would work).
Preheat oven 400 degrees
1) Blend all dry ingredients
2) Add butter in small pieces
3) blend butter between fingers
Great for biscuits and gravy!
