We talked on the phone and then met for coffee. Her passion for creating safe and yummy foods for her son (and for others) was immediately obvious. Her son's dietary restrictions go far beyond gluten; he can't have dairy, eggs, soy, nuts or peanuts. The challenge of finding safe child fun foods was one she took on and one she was able to overcome (as much as one can when confronted with this daily struggle to keep a loved one safe and included).
When she discovered her ability to cook and bake safely for her son----foods he enjoys (and others enjoy)----she wanted to create a product in order to serve the growing number of children with food allergies.
Fast forward to last week. We got together for coffee again, where she shared with me the product she created. And I was (and am) impressed.
Buddy Cakes are individual servings you mix in a cup. Just add oil and milk (non dairy milk if needed), microwave for a minute and then squeeze the packet of frosting on top.
Easy. Fast. Yummy.
